Sunday, August 14, 2022 - When we first popped this, it was a bit too "chardonnay" for my palate...Granny Smith apple flavors overpowered everything else. Nice, but not my glass of wine. Flash forward 2 days of this sitting in the fridge under vacu-seal, and WOW! The Rhone flavors have awakened and are shining bright. Much more viscous as well. Honeysuckle, apple, apricot, lychee flavors. Nice acid to balance the fruit too. Paired extremely well with poached salmon and broccoli. Drink now - 2029.
