Saturday, September 17, 2011 - This is a very different style to the Camille Saves rose, which is also one of my favorites. The Camille Saves has deeper and fresher pure pinot flavors as well as stronger acid streak that tastes like sour patch kids candy (without the sweetness). The Billecart Salmon Rose on the other hand is a deep shimmering orange color in the glass (this bottle had 3 years of storage age on it) and was a harmonious balance of maturity, balance, freshness, acidity, and good minerality. This is a very enjoyable bottle of champagne that anyone (even non-champagne drinkers) would love. I also recommend putting your bottles of this in the cellar for 2-3 years after purchase as time seems to smooth this out and bring out more complexity. A very good bottle of rose. The one negative about NV Billecart Salmon Rose today is the price. Many will find this champagne now priced between $90 and $105 per bottle. At those price points it is certainly not worth it. However, if you look hard enough (especially online), you can still find this for between $60 and $70 per bottle, which is where it should be priced.
