Sunday, April 13, 2014 - Beautiful, clear, deep black cherry color. Deep and complex nose of mushroom, leather, tea leaf, red fruits and berries, and cedar, really lovely and enticing. On the palate, less depth than expected but still somewhat complex, with volatility and peppery heat moving forward through the finish. Acidity seems to be fading, tannins are persistent but pleasant enough. This is ready now but should hold for a number of years. 8 hours slow ox in bottle, one hour in decanter, this would almost certainly have benefited from more air.
