Sunday, April 21, 2024 - Right off the bat, the nose had a touch of something funky, but it blew off with time. Overall quite a natural and wild fermented feel to it. Citrus fruits all over it, some fermented/oxidized green apple, unripe green stone fruits, green banana, crushed stone, oyster brine and this slight touch of green asparagus and tarragon.

Palate blew me away with how concentrated and weighty it was, but the acidity was blazing! Lemon juice, lime juice, citrus zest and pith, green apple, green grapes, green banana and some unripe element as well, but there's this creamy mouthfeel as well. Insane minerality with crushed and wet rocks and a lovely touch of sea breeze/oyster brine.

Absolute insane value ~€26 I need more!!!
