Wednesday, April 10, 2024 - Great stuffing, but super salty and tart and some celery.
Day 2 - some development, but not fun.
Day 3 - finally opened up and smoothed out with lovely peach notes and vegetal/mineral in the undercurrent.
Let these lay for 2 years.
