Friday, May 27, 2016 - The wine is clear and medium lemon in colour with bubbles.
The nose is clean with medium (+) intensity aromas of citrus (lemon, lemon curd), green fruit (baked apple), autolysis (biscuit, dough), tertiary (nuts, smoke, toast). The wine is fully developed.
The palate is of dry with high acidity, medium alcohol (12%), medium (+) body, pronounced intensity flavours of lemon, baked apple, biscuit, nuts, smoke. The mousse is creamy. The finish is long.
The wine is outstanding quality. The wine has great concentration of flavours and complexity from primary, secondary and tertiary clusters. The acid balances the fruit and the finish is very long and persistent.
The wine should be drunk now (next 2-3 years) and is not suitable for further ageing. It has already been aged 8 years on its lees and is released ready to drink and fully developed.
A great pleasure to drink this to celebrate a merit mark in the WSET diploma Sparkling Wine unit.
