Tuesday, April 6, 2021 - 12% alcohol. Base (40%) 2014 (mis en cave 2015), Dégorgé 2019, dosage not stated, but secondary sources quote 10-11g/L, which surprises me. Pale golden colour.
The nose has linden blossom and yellow plum; nothing remotely oxidative.
The fizz is fine and persistent and it coats the mouth in a pleasant way.
The mouth has good depth and a pleasant savoury balance with a lively finish. Floral and mineral, including a saline note; a slightly bitter note in the aftertaste is not unpleasant. The dosage is well integrated. Very good now, with the potential for further mellowing.
One of my regular NV Champagnes, and utterly reliable. Probably slightly more angular than Bollinger at this stage. Perfect with smoked salmon, and I am looking forward to finishing the bottle with oysters in two days' time.

PS: after two days in the fridge topped with an ordinary cork, the wine is in superb condition with an unchanged level of fizz; in fact, I think that I enjoyed it better than on day one. This wine should get better and better over the next five years.
