Friday, January 14, 2011 - From a Magnum during the family Christmas dinner, paired with turkey and diverse traditional side dishes. Please take note that I love Poyferre, and have wide experience with the chateau, as it is easily the most stocked wine in my cellar. This is the first time I have opened the 2000, and it was a clear case of stupid infancticide: it is still too early to drink this young wine. Do not think, as I did, that you can get around the youth of this wine by decanting. You cannot. The wine is classic, and extremely reserved, merely a suggestion of what it might be in 5 years time, which is when I will open the next bottle. Will be a wonderful wine in 2015, but now it is still putting on muscle and training its moves. Like a dancer still in the 2nd or 3rd year of lessons with no professional concert experience.
