Friday, April 19, 2024 - Double filteted/decanted. Loads of sediment & funky nose to start but quickly opened up. Perfect with duroc chop pan fried with shrooms & pancetta layered into mushroom ravioli. I sensed savory acidity ala pomegranate seeds that have started to ferment with a nice savory earthiness. Long red fruit finish with just a hint of absinthe. Past its prime? Not for me, evolving character of really well aged wines like this is a lovely unique experience.
