Wednesday, January 6, 2021 - Vintage & Vinification
A selection was made in the vineyard of the more intensely flavoured Chardonnay grapes from Block 6. Fully ripe grapes were carefully hand harvested in late March and whole bunch pressed to minimise phenolic pick-up and retain flavour intensity. The juice flowed directly to barrel without settling, utilising the full juice solids. Fermentation in French oak (13% new) with indigenous yeasts has produced a wine with considerable complexity. Complete malolactic fermentation and regular stirring of the lees (Batonnage) has softened the acid for a rich and harmonious mouthfeel. Racked off gross lees after 18 months and bottled with no fining and only coarse filtration.

Colour lemon to gold bright and clear 15/15
Nose med intensity secondary aromas , butter cream vanilla oak spice dried honey , still plenty of primary fruit aromas yellow stone fruit peach nectar ine , citrus mandarin peel , orange , trop fruits pineapple mango melon, floral acacia blossom and mineral flint wet stone , great complexity and layering 29/30
Palate med+ bodied secondary flavours Leesy creamy mouthfeel still has good acidity classic Chardonnay flavour profile 41/44
Overall extraordinary wine for its 14 years bottle age and from a warm vintage 9/11
