Saturday, January 19, 2008 - After receiving the gorgeous '05's, I decided to pull one of these for a prix fixe menu. Awesome aromatics. Garrigue, spice, game, and truffle. Little hints of wild berries for fruit along with some cherry. The palate is surprisingly still structured to last a few more years. Medium body, full of exotic spices, with plenty of earthiness, minerals, and a long finish. Drinks like a maturing CdP of decent quality, but for half the price. Beautiful. Paired with a five spiced lamb rack.
