Monday, April 28, 2008 - Raisiny, cherry, tart. Open 3 hours, this was a fresh, tart wine with a little bitterness... in a good way. At 24 hours things softened and improved to quite nice, one might almost say fruit bomb, as the extraction is excellent, except that the acidity and tannins do a good job of balancing the fruit. So, first day, hmmpf; second day pretty nice. I have insufficient experience with ripasso to know if this is typical or not.
