Saturday, June 20, 2015 - #17-08, 7.5% abv. From half-bottle. (Pop and pour.) Very pale colour, with just a hint of green still. The Pruem nose (be it sulphur, sponti, or whatever else) is strong on this one. I can't quite get past it to detect anything else on the nose at the moment. I plan to leave this guy out for a few days for the aromas to reveal themselves. I have, like, n more of these (where n is so large I cannot count that high), so I'm not gonna run out of them any time soon -- I figured breaking open one or two of these early on to get a sense of how they were doing would be a useful exercise. The palate is very sweet and rich, and shows a predominant floral and honey tone, as opposed to fruit-influenced flavours. There is a bit of pineapple gummi bear, but it isn't in the same way that you get from Willi Schaefer -- this one is sweeter and showing more candied notes than pineapple -- if that makes sense at all. I'll check back on this half-bottle periodically over the next week. (Day 2) No changes. (Day 3) A bit of white peach and pineapple has slowly started to emerge on the nose, but it's not very prevalent yet. The palate has held pretty stable. (Day 6) The sponti still hasn't even come close to blowing off. The palate is much more open and approachable now, with lots of white and yellow fruit, Very sweet, but I'd like just a touch more acidity. It's very trying how slow this is evolving! (Day 9 -- it's a Starcraft 2 reference, get it?) I'm getting more honey and lychee aromatics today, but this is still as coiled as before. Geez, will this wine please budge? (Day 13) The last bit today. I think this has finally come around. The aromas of sponti are still there, but finally muted. This is immensely honeyed and rich both on the nose and palate, and while the acidity is on the low side, there's still enough to keep this from becoming cloying. Given the richness now and the longevity of this half-bottle in my fridge, I'm optimistic about this wine's long-term prospects.
