Sunday, May 26, 2019 - Decanted four hours in advance, then drank alongside ‘93 Dunn and a ‘14 Futo with cowboy rib eye, carrots and zaatar w labneh and tahini garlic sauce, asparagus and goose fat roast potatoes. The pairing was amazing, the other wines were also excellent, but to me this wine, still only entering adolescence, shone brightest. One of the deepest purple wines I’ve seen, with a nose of cedar and cassis, the wines mouthfeel is rich and creamy and the sweet tannins give the fruit forward juice a backbone that will make it lAst through another three decades. I’d open another one tonight if i could but it would be a mistake.. give it some time and it will be a perfect wine. It’s almost there now, leaving nothing to be desired but maybe a secondary note and a little less heat on the finish.
