Saturday, November 6, 2021 - Raveneau's 2007s are brilliant. I have never been disappointed by one. On this night, we had 4 Raveneau 1er Crus together (this one and the 2012 Montmains, alongside the 2007 and 2012 Butteaux). All tasters agreed the 2007s were superior to the 2012s. And unfortunately our 2012 Butteaux bottle showed a touch odd and likely not at its best. But regarding the 2007 pair, this one was just a hair behind the 2007 Butteaux (which was the best of the 4 in my view). This 2007 Montmains was nearly as good. The 2007s have everyting you would want in a Chablis like this. Salty/ocean on the nose feature on both (interestingly the Montmains...both the 2007 and the 2012 also showed a smelly cheese aspect - not meant in a bad way - on the nose that the Butteaux did not feature). Great 2007 acids that make these wines jump. Maturing, but not overly so, flavour profile with a bit of creaminess there, but retaining excellent freshness. Wonderful minerality. Superb Chablis.
