Thursday, November 14, 2013 - There is quite a bit of variation in the bottles from the same case - this was much deeper and richer than previous bottles with a more pronounced oaky depth. Previousl bottles have been a sharp as a razor.

    11/14/2013 11:58:00 PM - Christmas probably. I've had too many premoxed Chablis to think about aging them more than a few years. Might stick a couple away for a few years to see what happens, but 50% of the time they turn into a mess. I actually prefer my Chablis a bit leaner and younger - I find the older ones less appealing.
