Wednesday, June 16, 2021 - Visually an older Champagne with a deep gold color. Still holding plenty of fizz. Aromatically, a beguiling combination of citrus and deeper honey and nut notes. Palate has plenty of acidity that conveys as a lemon curd flavor profile. Honey, nougat, nuts, browned butter, and some toffee notes all show up in the mid-palate and finish, which is medium long. I continue to think my favorite bottles of this wine are in the past but it isn't finished yet. This was served mostly on its own with some smaller antipasti selections.
A better food pairing would help it to shine more brightly. Drink.
