Tuesday, December 18, 2018 - It finished with a high level of acid and tannin. It had lost it’s fruit and was more savoury. Maybe more age will help.I kept it in the fridge for 24 hours & then let it air for 2 hours. I was disappointed that it did not seem to improve. I have a sense that it is flat. Maybe it is past it’s best.
