Thursday, February 24, 2005 - Decanted for 3 hours before drinking......made a big difference. Had with 2 different cheeses, a raw sheep and a goat with juniper together with rye bread and kalmata olives and the combination was very pleasing. Rhe wine greatly complimented the cheeses and bread whereas the 2003 Ambullneo..much more fruit forward better complemented the apples. This was the first (0f 20) of this wine and while yet young is very promising. Very balanced, should continue to evolve for several years...drinkable now with decanting.
