Tuesday, August 28, 2007 - Beautifully developed, mature bubbly. Medium golden in colour. The nose is very soft at first and I'm wondering if this is going to be tired. Nope! The palate is bursting with richness, creamy yellow pear, beaurre noisette, and grilled almonds. The acidity is somewhat toned down, but still allows for a refreshing finish. The nose eventually opens up with a slight nuttiness, dried apricot, and brioche. A very unique cinnamon spice hits me towards the finish as it opens up too. I think this is drinking as best as it ever will. Great experience with a mature wine.
