Saturday, November 3, 2012 - Consumed over two days, super sauvage and slightly out of balance with regard to heat and tannin on the first day, though still delicious. It took about an 8 hour slow-o and overnight in the fridge to get some of the meaty, savory elements to emerge when the tannin finally relaxed - then, it was pheonmenal example of Pegau. The ripe fruit takes on a scorched earth quality, making this a particularly dark fruited vintage. Will wait another five years before opening another. 14%
