Monday, January 27, 2014 - disgorged Oct. 20, 2010. yellow-gold; fine, streamlined mousse; oxidative notes shifted to nutty, raw buttermilk biscuit dough, quite yeasty, creamy & complex; less about fruit & more about texture, rich & full, w/great sense of style; so distinctive.
2/15/15 same disgorgement. brilliant this evening, w/perfect effervescence, full-on & toasty, certainly that oxidative quality is there but so pure & delicious, bread dough & yeast, at a great point. (93)
