Monday, November 24, 2008 - La Paulée dinner (Summer Pavilion, Ritz Carlton, Singapore): Green gold in colour. Nose was really green and grassy, with underpinnings of gooseberry that was more reminiscent of Sauvignon Blanc than Chardonnay. The palate was full of sparkly, lemony acidity, very fresh and mouthpuckering. Very snappy, almost too much so, so that the wine seemed a little tart at times. After some time, a gummy candy tone with touches of pineapple started appearing, balancing the bite a little. The best thing about the wine was its finish, which was long, sappy and had a nice perfumed linger of white fruit, flowers, chamomile and flint. I got more of a sense of sweet roundness just at the end of this wine then at any other point. Not unpleasant, just lacking some definition and character.
