Friday, June 3, 2011 - Very light straw color, almost clear with persistent stream of tiny bubbles.
Nose offers yeast, and wet stone, with faint apple notes. On the palate aggressive mousse, dry, crisp, with racy acidity. I picked up flavors of tart apple with peach, and mineral notes. Short finish.
