Thursday, July 3, 2008 - This is EXACTLY what I think Champagne should taste like. Elegant and refined, with racy acid that sweeps up through the bright apple/pear fruit of the mid-palate and then clears the way for a luxurious graphite-laden, mineral finish. With a little air, the nose becomes a wonderfully complex mix of honey, white flower and pain grille. I actually prefer this to the prestige cuvées from Vilmart. It's exceptional. And, so far, has not disappoined. At 10g/l dosage, it's the exception to my current preference for brut nature sparklers. Cork date/disgorged 12/06.
