Saturday, December 25, 2010 - This wine, when first opened, is a bit out of balance with acidity and very present sweet tannins dominating; however, with two hours of aeration it begins an ever-changing transformation first into a well balanced tobacco, earthy, and sweet tannin-braced wine with some coffee and bold saddle leather on the nose, followed by the emergence of menthol notes as dark fruit and raspberry begins to come out more. It ends up losing its complexity after 3-4 hours as the fruit comes to the forefront.

Went very well with rare filet butterflied into 3 layers with sauteed portabellos between them and red/yellow peppers as garnish, along with French style mashed potates made with milk, garlic, nutmeg, and egg yolk. On its own, however, I don't know if it would be outstanding -- but would still be very good. Unsure if it will evolve further, and I think that all of the great components that show themselves at different points as this wine aerates will never be in perfect harmony. Still, this is so much better than so many similarly-priced bdx'es from '04 and '05 at this point...
