Wednesday, July 3, 2019 - It has dropped some of the more intense sour notes in favor of a little savory element that one would expect as it ages. Tannins are still a bit rustic and bitter. Hoping that this sorts itself out with time. I’ll try to ‘lose’ these in the cellar.
