Monday, May 2, 2011 - Got this bottle from a friend and took to Agora Churrascaria, a Brazilian BBQ restaurant near John Wayne airport; BevMo sells this bottle for $90.
We poured this wine into our glasses and let it breathe for about an hour before drinking it while we worked on our other fabulous bottle (2006 Windward Pinot Noir from Paso Robles; a fantastic Burgundian-style Pinot that was the very first tasting note I had written on Cellar Tracker).
After breathing for an hour, this Cab had a wonderful bouquet of black fruits (plums especially), spices, earth, and oak.
This Cab Sav has a fantastic spiciness, especially black pepper and savory herbs, as well as black fruits like plums, currants, and blackberries. There's also the PERFECT amount of oak, as well as wonderful chalky terrior/earthiness. The tannins are still very firm; this wine will probably continue to age beautifully for another 10 to 30 years (or more?). And at only 13.5% alcohol, this wine was beautifully well-balanced; we are always pleased to come across a Calif Cab Sav that can be fruity and spicy and delicious and have less than 20% alcohol.
This wine went extremely well with the assortment of meats; this wine is a perfect red meat wine (any type of steak will pair nicely with this bottle).
Our only complaint: price. $90 for a nice Cab Sav isn't outrageous, but you can drink a LOT of fantastic reds for a LOT less money. The Windward Pinot we also took to the restaurant cost us only $28.80 through Windward's wine club. I'd rather drink three bottles of Windward Pinot versus one bottle of this wonderful Cab Sav (figuring monetary concerns into this equation), but maybe that's just me?!?!
