Saturday, January 16, 2010 - Most of the 2007 Chevillon Premier Crus (Vin Vino, Palo Alto): The earthiest nose of the bunch, which rapidly unfolds with gorgeous complexity that makes it difficult to isolate different elements of the fruit. Enveloping, subtle, damp earth on the palate. Tannins less obvious here and the acidity arrives very late. Great feel in that it is already seductive and lacy. Smoke and scorched earth come out with more time. By time I finished, it was still following a trajectory of increasing roundness and complexity. My favorite wine today without question. In so many ways, quintessential Burgundy with a marvelous future.
