Saturday, November 11, 2023 - Stood up a week in advance. One hour slow oxidation. Decanted for four hours. Bottom neck. Cork in good shape. Medium garnet in the glass. Complex and layered with slightly damp leather, stewed tomatoes seasoned with cracked black pepper, black shoe polish, dried rosemary and thyme, and a feint hint of aniseed. Sleek, polished and structured.
