Sunday, February 12, 2012 - My current favorite Napa Cab. Did the tasting on the patio at the winery in '06 and have been a big fan ever since. admit that the '05 seemed more elegant than the '07 but we opened up an '07 the other night for friends, brought it up to temperature and ran it through the venturi and it was solid although we finished it before it had a chance to really open up, unfortunately. it was pretty tight. oh well, there's some more in the cellar that will get even better with age. this wine needs to age and breathe and it needs to be paired with a thick, seasoned prime piece of your favorite cut of beef grilled at 700 degrees and served rare! I put it up there with Lewis Cab.
