Tuesday, February 2, 2021 - Wow! This was fresh. Will Smith in Fresh Prince, fresh. Clean, young, tight and bright. Electrifying bubbles and acidity. Lemon zest and sea spray. Nowhere near as vinous as I would’ve expected this to be. No toast, no nuttiness or ripe yellow fruits. Minerals were calcareous - chalk, flint and limestone with oyster shell. Another stunning Champagne from the 1997 vintage. Obviously 🔝 tier, and possibly the Champagne of the Vintage.
