Thursday, February 15, 2024 - This wine had a long and moving story to tell over the course of 5 hours. In the beginning it was all about the nose. Too rough to drink at first . There was blood and sauvage like the smell of raw steak fresh from the butcher. Soon the underbrush and forest floor came into view, along w bright underripe cherry . By hour 2-3, a chorus of developing flavors of Maillard reaction (complemented by the seared ribeye,) blood orange, mineral, cooked game. By the end of the bottle it was simply a flash mob of different fruits- we called them out as we picked up new scents and flavors. Plus the long finish that went on and on. Was the last sip the best sip? It was the softest and most open to be sure. But this bottle was just as much about the journey as the destination. Brilliant and ethereal.
