Sunday, July 25, 2021 - Just took delivery after 2 month ocean freight. Probably should have waiting a month or two to let it settle, but I decided not tonight. Put into freezer for an hour and popped and poured. Into a Riedel Bordeaux glass. Doing everything wrong tonight. Golden straw color. Yeasty lemon curd. In the mouth, an odd sourness, not unpleasant. A bit too cold but as it warms up, the ripe apple and lemon curd much stronger. A hint of sweetness, but more acid and sour than sweet. Has an oily mouthfeel and the taste lingers a long time. I kind of like it, but not sure about the sourness.
