Tuesday, June 2, 2015 - We had a most excellent event last night at La Table de Patrick in Hong Kong! Quite a hidden, little gem in the hustle and bustle of Central. We now have re-dubbed it “Pat’s Place” given the entire vibe resounds with his passion!!! We sipped this bubble which was a special, impressive and reasonably priced discovery. After 400 years in the business, we are not surprised to fall head-over-heels with this blend of 2/3 Pinot Noir, 1/3 Chardonnay and ZERO dosage. The label, which is made from a metallic substance and beautifully designed, speaks volumes to the elegance and excellence of the estate. It was dark yellow with very fine, barely discernible bubbles. Strong yeasty nose and particularly powerful and long lasting on the palate. We were delighted to sip one of only 5000 bottles produced and recommend this “wine” to any bubble-lover!
