Friday, August 29, 2014 - Intense nose of cola, leather and some minty notes, though almost entirely secondary, just hints of some blueberries, but the fruit seems rather attenuated. Surprisingly lightweight on the palate, this lacks some of the density I've seen when drinking this wine younger. We opened this and let it sit for about 30 minutes before tasting. Heat was very present early on, but faded a bit with time. The heat was really distracting, and was replaced by a nice pepperiness. The tannin is still quite aggressive, which comes of as slightly out of balance now.

Day 2: While the fruit seemed rather dissipated last night, tonight, this was a very different wine. After getting back to room temperature, this was significantly better than yesterday. The cola on the nose was accented with a root-beer like sweetness. This softened into waves of intense red fruit. The tannins were still rather intense, but everything seemed much better balanced today. Thus, it seems that this wine was just really closed up to begin.

Day 3: Just a little bit left. That cola/root beer is still on the nose, and this still has some pretty significant tannic grip. Maybe a hint of liqueur. The heat and pepper is not really visible anymore.

On another note, this didn't play particularly well with food: with baby back ribs, it showed some bitterness in contrast to the (mildly) sweet and tangy sauce, and with fried chicken it just seemed deadening.
