Friday, January 8, 2010 - What a great drink right now. Complex nose of ever evolving mineral, white flower, tea (tilleul) aromas. Noble bitterness which characterises white Simone dominates at first, then the iodine, mineral, mixed with honey and wax notes shows increasingly. Slightly creamy texture, great length and precision. Very fresh still, very classy and elegant, yet eminently drinkable and mouthwatering. Definitely one of the most complex and appealing white wines in France, in my view. A beauty.
