Thursday, March 25, 2010 - Rookie mistake here, a fc of these arrived yesterday and I couldnt contain my excitement so I popped on. Bad call, the wine was all out of sorts with high acidity. I started to think that maybe this was past its prime, so I called the vineyard and Kurt talked me off the ledge. I put it thru the venturi and let it sit for 1/2 hour, and the acidity started to level out. Definitely still some heat, but the rasberry profile started to show. I'm looking forward to trying this again in a month after the wine has settled.
