I started to think that maybe this was past its prime, so I called the vineyard and Kurt talked me off the ledge. I put it thru the venturi and let it sit for 1/2 hour, and the acidity started to level out. Definitely still some heat, but the rasberry profile started to show. I'm looking forward to trying this again in a month after the wine has settled.
