Saturday, March 19, 2011 - After last nights bottle, I had to raise my rating on this wine. Brought up from the cellar to serve with cheese. The color was bright ruby and was filled with aromas of herbs de Provence. As the bottle aerated, the wine seemed to evolve into this cherry fruit bomb, which had nuances of a Bordeaux. After thirty minutes, the wine rounded up enough to transfer to the dinner table and continued to get better until she was finished. EG WineArchitect
