Thursday, January 4, 2024 - Root Day - level bottom of neck. Cork sound but wine soaked almost to the top. Dark lemon in colour with a wonderful bouquet of nuts, citrus, chalk (?), mineral and caramel. On the palate it’s mouthfilling with little of the sherry aspect I expected - much more fruit forward (pear/apple) and with stunning acidity that cleanses the mouth. Long finish with citrus, sherry and now some toast and spice showing. Definite drink now.
