Thursday, October 21, 2021 - Btl #384. Notes after four hours in decanter. Intact but saturated cork. Dark, dusty ruby color with quick legs and a small amount of sediment. Wet wood (not cardboard) and poop are prominent for the first 30 minutes on the nose and then it settles down to dark plum, fig, brambles, and toast. Compared to two years ago, this is coming across like it’s running out of gas and there isn’t going to be enough fruit to carry it long into the future. Throughout the 4 hours of tasting, it never developed up in any way and remained rather flat. 4+10+16+7= 87

    10/21/2021 8:49:00 PM - Just curious why you decanted it so long. I no longer decant Burgundy anymore. If I do it’s maybe 30 minutes. I like to see how the wine develops overtime. For me they are never over tannic so I don’t decant them much anymore. Just curious.

    10/22/2021 7:20:00 AM - R, I put half the bottle in decanter and let the other half slow-O. It did help the initial funk blow off but even after four hours there was no difference between the bottle and decanter and the wine really didn’t move in any direction. I always follow it along the way and no, I don’t actually wait four hours before tasting. Honestly, I would not be surprised if premox was part of the issue but I don’t have a lot of experience with that so I’m not real confident in evaluating it.
