Sunday, May 2, 2021 - This was the last remaining bottle of 3 that I purchased soon after it was released. It had been ignored, but last night with a nice ribeye on the grill and some butternut squash I opened it up. Honestly, I was fulling expecting it to be well past its prime, but I was very pleasantly surprised. It drank beautifully and more mature than the last bottle I drank several years ago. The color was garnet, and the nose on opening was plum, cherry, tobacco, and earth. The first taste was more of the same and actually sweet with some spice and dark fruits dominating. The finish remained fruit forward, think dried cherries, plums, bits of stem, but faded into saddle leather, earth notes, lingering long and not becoming bitter. The food pairing was perfect and the bottle was drunk over a period of 4 hours without fading into a blurred tar mess. I was very impressed with this as I remembered earlier bottles being more fruit forward and not as complex. If you have any of this remaining hidden in your cellar drink up and enjoy, it is not in a bad place at all. Cheers
