Thursday, March 10, 2011 - Tight and unyielding at first, barely emitting but a whiff of grated ginger and tart cherries. A little breathing and the introduction of a dish of duck ravioli with mushrooms ignite the wine and unlock all sorts of ethereal notes. There’s rosewater, dark cherries, lighter cherries, quite tart cherries and a little liquorice. Scratch just below the surface and you find a little meat and earth and the oak imparts juts a touch of creaminess to the fruits. Did I mention tart cherries? Well they boot in at the finish and drive the wine home with a big lick of minerals.
