Saturday, October 30, 2010 - I am not able to give a true accurate description of the color of this Champagne due to I ordered a glass of it with my dinner at a restaurant with dim lighting. In spite of this Champagne not being served in a proper Champagne glass, but close enough, I was able to get aromas of toasted almonds, yeast, mineral, green apples and pears. It tasted of toasted almonds, yeast, mineral, pears and green apples. It seemed like there was an ever slight aroma and taste of honeysuckle as well. The bubbles were very fine and plentiful. This Champagne is good now, but time in the cellar will be very rewarding. I would drink this between 2012 and 2027+. Excellent bubbly!
