Thursday, February 17, 2011 - Its body held a vibrant goldish yellow hue and it exhibited a pearly luster. While it was served in a standard party style wine glass, the sheer amount and persistence of the bubbles were remarkable and I can only image their concentration served in proper flutes.
On the nose, the freshness of the yeast was primary and right away I got the olfactory sensation of lemon juice squeezed over crushed soda and graham crackers. On the palate, its most striking component was its laser guided, pinpoint acidity. I picked up a wonderful citrus and peach driven minerality as it finished with profound elegance and length.
