Friday, September 28, 2018 - Perhaps just past it’s peak. Still has mellow fruit notes, but the earthiness dominates the palette. We stored this in a wine fridge at 55 degrees with humidity control, and it aged gracefully. Paired with sea trout grilled with Pinot salt and served on a bed of fregola sarda with sautéed kale.
