Monday, December 10, 2012 - WSET Level 2 Class 8 (BCIT Downtown Campus, Vancouver, BC): Tasted blind. Clear, pale lemon-gold. Fine bead, slowly rising. Nose is clean, medium+ intensity, aromas of ripe apple, lemon curd, nuts, pastry, with a bready and slightly mushroomy finish. Palate is not quite dry, with medium+ acid, medium body, flavours of baked apple, lemon, toasted nuts, slight carmel. Mousse is fine and persistant, and finish is long. Very good quality Champagne.
