Monday, July 27, 2015 - PnP. Immediately marked by cured meat, smoke, and lifted fruit that leaves the impression of berries. Know this is young, but wanted to gauge one. The way it unfolds with salt, stone, cured meats, and berries is seamless and balanced in the contrast of dark and lighter elements. The acid is quiet and integrated, evolving as slow as the wine is prone to do. Brilliant finish of fine charcuterie and berry preserves that is long. Smashing with thin slices of salami. Lots of time to go on this one, let's see what day two brings.
