Saturday, October 20, 2012 - While overall I think that Jose Dhondt is a fantastic grower, one problem that I have come across is the variable quality of the individual bottlings. For whatever reason, you can drink one bottle and have a great experience and then have an average experience with another bottle of the same champagne from the same lot. That must have been what I was coming across with this bottle, as my overall feeling was that although this had a wonderful silky and delicate mouthfeel, it was very one dimensional with very little complexity. In fact, the aftertaste was mostly just a nice apple flavor. While this was certainly good, at this price point it is not what I expected. I still have a couple Dhondt bottles left, so I will get to repeat this experiment at some point in the next several months.
