Wine Details
Region: Veneto
Grapes: Corvina, Corvinone, Rondinella, and Molinara
Vineyards: Vineyards located on the hills of Marano, in the Valpolicella Classico; soils are compact, calcareous-Eocene; terraced with dry stone walls called 'marogne'
Alcohol: 15.50%

Harvest
Grapes were harvested by hand at the beginning of October and left to dry for about three months until the end of December. The grapes are spread on traditional 'arele' racks or trays suitable for drying. The bunches lose about 30% of their weight during the drying phase.

Vinification
In January, soft pressing, with great respect for the integrity of the skin; vinification with prolonged maceration at a controlled temperature.

Characteristics
Intense garnet red color. Ethereal, slightly spicy aroma, with hints of cherry, bitter almond, and dried plum. Warm, velvety, soft flavor.

Aging
Aging partly in large Slavonian and Allier oak barrels for about 30 months and partly in medium-toasted barriques for about 18 months. This is followed by bottle aging for about 12 months (varying periods depending on the vintage).

Pairings
Particularly suitable with braised or stewed meat dishes. Serve at room temperature, around 18-20 degrees C. It is advisable to uncork at least 3 hours before serving.
